Personally, my favorite type of trip is when I am eating traditional foods!  Walking through local markets, buying fruits street vendors, eating with locals menus that might not be in my language, trying different country or regional specialties each night, sampling local desserts at restaurants that have been there for decades or modern and popular with locals, drinking a local beer or wine, talking about traditions and life.  But enough about me.  All of our itineraries will include great restaurants with local cuisine.  But if you're like me, we'll tailor some (or most) of your meals and activities to really get Vietnamese cuisine.  Our guides will take you to local (and reputable and even some famous) restaurants and street vendors, guide you through sampling local fruits like Rambutan, Dragonfruit, Mangosteen, we can even arrange for simple and local cooking classes, where you first buy ingredients at a local market.  And in Hoi An and its surrounding villages, you can tour rice planting and even plant your own rice.  Try renowned Hue cuisine, the best Pho, Bun Cha, Che Vietnamese dessert, classic Vietnamese springrolls, and even choose live seafood street vendors, cooked for you on the spot – steamed, grilled or sautéed with lemon grass, tamarind or coconut milk.  And since you may do more walking on this itinerary, we can build in any amount of spa or massage time throughout your trip:
